Breakfast Burritos

Ingredients

  • 12 eggs

  • 1 tbsp olive oil

  • 6 ounces diced ham

  • 2 cups shredded cheddar cheese

  • Veggies of choice (diced peppers, scallions, tomatoes, onion, mushrooms, spinach)

  • 6 (12-inch) Tortillas

  • salt and pepper to taste

Preparation

Step 1


Cut up veggies and place in pan on medium heat with olive oil.


Step 2


In a large bowl, whisk eggs, salt & pepper.


Step 3


Add ham to pan veggies and stir for 2 minutes.


Step 4


Pour egg mixture in pan and stir until eggs scramble.


Step 5


Add cheese, stir and turn off the heat.


Step 6


Place 1/6 of the concoction in the middle of each tortilla.


Step 7


Roll the tortilla into a burrito shape, careful to not spill the contents.


Step 8


Wrap each burrito in non stick Reynolds wrap and place in Ziplock freezer bag.


Step 9


Keep in freezer until needed or put directly in cooler for camp.


Step 10


When ready to eat, place burrito on grill for 15 minutes.

Or take it out of the foil, dampen a paper towel and cover the naked burrito on a plate and warm it for 90 seconds in microwave.
