Egg Muffins

Ingredients

  • 12 Eggs

  • 3 green onions diced small

  • 1-2 cups shredded cheese (I like sharp cheddar)

  • 1 tsp garlic powder

  • 1 tsp celery salt

  • 1 tsp chili powder (optional)


  • 1/2 tsp black pepper

  • 1/2 tsp salt

  • 2 tbsp Everything bagel seasoning (save till later)

  • 1 tsp paprika (save till later)

  • Any other chopped veggies you like such as spinach, peppers, mushrooms, zucchini, broccoli, etc.

  • Optional: diced Canadian bacon, lean ham, or crumbled cooked turkey sausage 

Preparation

Step 1


Preheat oven to 375 degrees.


Step 2


Spray muffin pan liberally with nonstick spray.


Step 3


In the bottom of muffin cups, layer green onions, veggies, diced meat, and cheese. You want the muffin cups to be about 2/3 full, with just enough room to pour a little egg around the other ingredients.


Step 4


Break eggs into a large measuring bowl with pour spout, add seasonings, and beat well.


Step 5


Pour egg into each muffin cup until it is 3/4 full. 


Step 6


Stir with a fork to evenly distribute.


Step 7


Top with Everything bagel seasoning and sprinkle with paprika.


Step 8


Bake 25-30 minutes until muffins have risen and are slightly browned and set.


Step 9


Muffins will keep more than a week in the refrigerator. Or put them in a ziplock and freeze them in pairs. Then warm in microwave.
